Some of us have read research reports on the many health benefits that chocolate offers to us. Of course we want to believe these for it makes it easier for us to indulge in delicious chocolate recipes. I have found that this is pretty much the end of the chocolate knowledge for most of us. Not much consideration is given to the difference in taste of the chocolate, depending on the country of the origination of the cocoa trees. Likewise, not much thought is given to the variety of processing techniques, which can change the overall flavor. There is so much information available for people who truly love chocolate.
Cocoa trees are grown in countries around the world within ten degrees north and ten degrees south of the equator. This is the perfect climate for growing the trees. Although it is a small range of the equator, the growing conditions still vary considerably. The amount of rain and minerals add to the uniqueness of each country's product in chocolate recipes. Also, greatly affecting the final product is due to the processing plant. The temperature, time and degree of moisture are manipulated during the roasting, which can change the flavor from plant to plant. A manufacturer can change the flavor in the alkalization process or by aging the chocolate. It is best to sample chocolates from different countries and processed in different ways to find your favorites. You may discover a whole new taste of chocolates.
Chocolate recipes are not just desserts. The mole sauce recipe and the cocoa nib recipes are used as part of entrees. The mole sauce is like many consider to be gravy. It can be served over egg dishes, pork chops or other meat recipes, as you would a gravy sauce. It is especially delicious when seasoned with hot peppers. Cooking with cocoa nibs is a fairly new concept to most cooks. This byproduct of the cocoa bean is a little bitter tasted alone. Seasoned with spices like salt, pepper, garlic, rosemary or thyme, ground nibs makes a very good crust for chicken, fish or other meats.
It would be hard to convince many that there are not tremendous health benefits of chocolate. One taste of a luscious dark moist brownie drizzled with a chocolate liqueur would lift anyone from the pits of depression to a lighter spirit. Try to convince a chocolate lover otherwise. The ultimate chocolate recipe to a healthier life is being treated to a chocolate massage. Chocolate is a natural detoxification, which is very good for your body. Try relaxing in a dark room with the intoxicating aroma of the warm melted chocolate. Then have this warm melted chocolate lavished over your whole body. This sends your whole body, mind and spirit into a heavenly bliss. Now could anyone believe there are not health benefits from chocolate?

Gobioides broussonetti Dragon Fish $5.99 Dragon Fish, or Violet Gobies, are odd fish that are native to coastal brackish marine estuaries of the western Atlantic coast from the Carolinas to Brazil. In captivity, they seem to thrive the best in brackish water. They are characterized by a long, silver-violet eel-like body, with dorsal and ventral fins that extend all the way to the tail. They have tiny eyes and a large mouth in which their sharp teeth can be clearly seen. Despite their predatory appearance, Dragon Fish are not big predators. They have poor eyesight, and do little hunting. Dragon Fish often feed by scooping mouthfuls of sand or mud, swallowing edible items, and spitting out the rest. Their natural diet consists mainly of diatoms, worms, and small crustaceans. In the aquarium, they will accept live and frozen blackworms, bloodworms, brine shrimp, ghost shrimp, krill, as well as sinking pellets and occasionally, tiny guppies. Due to their poor eyesight, Dragon Fish are often slow to find food, and do not get enough to eat before other fish consume all the food. Be sure that your Dragon Fish gets plenty to eat, or it may starve to death. Dragon Fish should be kept singly unless a large group can be kept in a tank of about 100 gallons or more. In small tanks and small groups, one larger Dragon Fish will dominate the others and some may be bullied or not get enough food. Dragon Fish can be kept with most peaceful fish that are too large to swallow. |

Its body is gray to black with a slender forked tail. The Elephant Nose is a nocturnal fish, hunting and feeding mostly at night. It uses its long snout to help it find worms, insects, larvae, and small crustaceans in the substrate. It is important to provide smooth-sided gravel or fine sand so that it does not injure itself when looking for food in this way. Elephant Noses will accept most small live foods, but can usually be trained to eat frozen foods and sometimes, sinking pellets. The Elephant Nose is able to produce a weak electric discharge that it uses in courtship and in locating prey. This fish is relatively peaceful toward other fish of similar size, but is territorial and aggressive with its own kind. For this reason they are best kept one per tank unless the aquarium is very large, about 200 gallons or more. Provide a heavily planted tank with soft, acidic water and subdued lighting. This provides natural hiding places and will help minimize stress. Elephant noses are sensitive fish, and are easily stressed by poor water quality. Frequent water changes are a must to keep this fish healthy. Use caution if it becomes necessary to add medications or other harsh chemicals to the tank as many of these products are harmful or fatal to the elephant nose. If using medications, read the instructions carefully to be sure that the product is safe for scale-less fish. It may be necessary to use a mild medication or use a product at half-strength. They will, however, eat very small fish on occasion, such as fry, so be sure that tankmates are too large to be swallowed.
