One of the ultimate "comfort foods" is Potato Salad. This one is an updated version of the recipe my and your Grandmother or Mother probably made. No picnic or reunion in a grove would be complete without a tasty potato salad. This one has some cayenne to give it some heat but if you like a milder version, cut the amount or leave it out. The potato salad I remember mother always made had dry mustard in it, and so does this recipe.
Preparation is very important in making this dish. Too much mixing will round off the corners and cause the cubes to turn into a mashed potato mix, which is not what you want. Another way to prevent this is to slightly undercook the potatoes so the cubes will be more sturdy.
Since mayonnaise has been the culprit in food bacterial problems, it's a good idea to keep the potato salad cool rather than let it sit out on a hot day. This recipe will feed 4-6 people, so if you are feeding fewer than this, cut the recipe in half if need be. This will avoid the "leftover" problem and thus eliminate the growth of bacteria in the salad.
Ingredients
3 cups potatoes, diced 1/4 inch
1 medium onion, diced fine
1 cup celery, diced fine
1/4 cup olive oil
1 teaspoon salt
1 teaspoon dry mustard
1/2 cp spicy mayonnaise (see recipe below)
2 eggs, hard cooked
Instructions
1 - Cook potatoes with skin on, cool, peel, then dice to 1/4 inch
2 - Add celery and onions to potatoes, blending carefully to avoid mashing the potato.
3 - Pour olive oil over the potato mixture.
4 - Allow the mixture to stand over 1 hour in the refrigerator.
5 - When ready to serve, mix the "Spicy Mayonnaise" and fold into the potato mixture.
6 - Slice the peeled boiled eggs very thin and use as a garnish.
Spicy Mayonnaise Dressing
2 tablespoons mayonnaise
1 tablespoon prepared horseradish
1/2 tsp dry mustard
1 tsp vinegar
1/4 tsp cayenne pepper
Mix ingredients together and use mixture as directed above. If you wish to add a little more color, and a little different flavor, add some chopped up bell peppers, pimento, chives, or green onion slices.
This recipe makes a very delicious addition to any backyard barbecue, family reunion, or just as a side dish at supper time.
